Why A brewery or distillery Needs Purpose-Built Suppression

A distillery is a flammable liquid manufacturing facility that most people think of as a food and beverage operation. Ethanol has a flash point around 55 degrees Fahrenheit, which makes it a Class IB flammable liquid under NFPA 30, in the same classification bracket as gasoline. Distillation concentrates it deliberately, and the process produces vapor at the still, the spirit safe, the collection vessels, and every transfer point in between.

The barrel warehouse is where the severity concentrates. A rickhouse holds thousands of gallons of high-proof spirit inside wooden containers, stacked, in a building that is frequently designed for ventilation rather than fire containment. Evaporation through the barrel wood, the portion the industry calls the angel’s share, means the atmosphere carries ethanol vapor continuously. In a fire, barrels fail and release burning liquid, which then involves the barrels below and around them. The result is a cascading event that has repeatedly proved beyond the capacity of the protection installed.

Barrel Warehouse Protected as Ordinary Storage

A rickhouse is thousands of gallons of Class IB liquid in combustible containers, and it behaves in a fire like a flammable liquid storage occupancy rather than a warehouse. Protection designed for general storage density does not address barrel failure and the cascading release that follows, and containment for released spirit is frequently absent entirely.

Growth in a craft distillery is measured in barrels, and each one adds Class IB inventory. Why the Rickhouse Is the Defining Exposure

Every other hazard in a distillery is bounded by the equipment containing it. The barrel warehouse is bounded only by how much inventory the business has aging.

The containers are combustible and the contents are Class IB. A barrel is a wooden vessel holding high-proof spirit. In a fire the wood burns, the barrel loses integrity, and the contents are released as burning liquid onto whatever is below. That liquid then involves additional barrels, which fail in turn. The mechanism is cascading by construction, and it is why barrel warehouse fires in this industry have so consistently resulted in total loss.

The atmosphere is never clean. Evaporation through barrel wood is inherent to aging, which means the warehouse atmosphere carries ethanol vapor continuously. Ventilation keeps it below dangerous concentration under normal conditions, and the building is usually designed with that in mind rather than with fire containment in mind. Those two design goals pull in opposite directions.

Containment is the provision most often missing. Protection density gets attention because it is a sprinkler calculation. What frequently does not is where several thousand gallons of released burning spirit goes once the barrels fail. Without curbing, drainage, and containment sized to the inventory, the fire leaves the building at grade and the protection inside becomes irrelevant. This is the single most valuable thing to get right in a barrel warehouse.
